Protein Packed, Gluten Free Penne Pasta
(Serves about 3)
What’s In It:
3 cups gluten free penne noodles, 3 pressed garlic cloves, 1 teaspoon salt, 1 tbs. basil, 3 tbs. coconut oil, 1 cup spinach, 1 cup diced yellow squash, 4 oz. cooked and diced chicken breast
How to make it:
- Start by boiling penne noodles on high heat in medium sauce pot. ( I drop a couple tbs. of olive oil to make the gluten free noodles cook softer). Once penne noodles are soft, rinse under cool water and drain.
- In a separate large sauce pan, place pre cooked chicken breast and remaining ingredients to saute on medium heat for 7 minutes.
- Add penne noodles to large sauce pan and ingredients and stir on low for 3 minutes.
- Allow pasta to cool for 2 minutes and serve!
